There’s something so rewarding about making fresh cheese at home, and this easy to make cottage cheese recipe is surprisingly straightforward. It fills my kitchen with a lovely, clean scent, and knowing exactly what goes into it makes it taste even better – perfect on its own, in dips, or as the star of those amazing syrniki 😉

Ingredients

  • Milk (min. 3.2%) – 1000 gr

  • Greek Joghurt 10% – 218 gr

  • Lemon Juice – 3.4 gr

  • Sea Salt – 1.3 gr

Directions

  • Pour the milk into a saucepan and bring it to 60 degrees.
  • Add greek joghurt, lemon juice and salt. Continue cooking on medium heat for at least 10 minutes.
  • Bring the mixture to a boil, and remove from the heat.
  • Let the mixture cool down for ~1 hour.
  • Cover a strainer with two layers of cheesecloth and place over a bowl.
  • Pour the cooled down mixture on top, cover the top with the corners of the cheesecloth and leave in the refrigerator for at least 6 hours.
  • Transfer the cottage cheese to a clean bowl and store up to 48 hours in the refrigerator.
