There’s something so rewarding about making fresh cheese at home, and this easy to make cottage cheese recipe is surprisingly straightforward. It fills my kitchen with a lovely, clean scent, and knowing exactly what goes into it makes it taste even better – perfect on its own, in dips, or as the star of those amazing syrniki 😉

Milk (min. 3.2%) – 1000 gr
Greek Joghurt 10% – 218 gr
Lemon Juice – 3.4 gr
Sea Salt – 1.3 gr
Directions
- Pour the milk into a saucepan and bring it to 60 degrees.
- Add greek joghurt, lemon juice and salt. Continue cooking on medium heat for at least 10 minutes.
- Bring the mixture to a boil, and remove from the heat.
- Let the mixture cool down for ~1 hour.
- Cover a strainer with two layers of cheesecloth and place over a bowl.
- Pour the cooled down mixture on top, cover the top with the corners of the cheesecloth and leave in the refrigerator for at least 6 hours.
- Transfer the cottage cheese to a clean bowl and store up to 48 hours in the refrigerator.
