Russian pancakes, also known as “blini,” are a traditional and beloved dish in Russian cuisine. These thin, delicate pancakes are similar to crepes and are typically enjoyed as a breakfast or brunch item, but can also be served as a dessert or appetizer. They can be served with a variety of toppings, both savory or sweet. They are easy to make and require only a few basic ingredients, making them a popular choice for home cooks.

Ingredients

  • Eggs 1 pc

  • Sugar 2 tbsp (or less for savory taste)

  • Milk 260 ml

  • Flour 200 gr

  • Salt 1 pinch

  • Sunflower oil 10 ml

  • Butter 15 gr

Directions

  • Mix eggs, sugar, salt and half of milk with the whisk.
  • Add sifted flour and mix until smooth.
  • Mix in the other half of milk.
  • Add sunflower oil.
  • Heat the pan and spread 1 portion (1 ladle) on a pan. Fry for about 40-60 sec on each side.
  • Put a tiny bit of butter on top of every pancake when stacking them for a richer taste.
